Cheesecake Lemonbars
Many people asked for this recipe in twitter. My husband makes INCREDIBLE lemon bars but he NEVER uses a recipe. I made him tell me the recipe for this. I am hoping the measurements are accurate. :)
Crust:
Boxed lemon cake mix
2 Tbsp cooking oil
1/4 C water
Filling:
16 oz cream cheese
1 egg
3 C powdered sugar
1 tsp lemon extract
1/2 C powdered sugar (sifted)
Blend first 3 ingredients. Press into greased 9x9 pan. Bake at 350 for 15 minutes. Let cool.
Soften cream cheese. In mixer on low speed beat cream cheese and egg together until combined. Add 3 cups powdered sugar gradually. Add lemon extract. Increase speed to medium/high speed for additional 2 minutes. Pour filling over crust. Bake at 300 for 20-25 minutes until filling is firm. Let cool. Sprinkle with sifted powdered sugar.
