Cheesecake Lemonbars

Many people asked for this recipe in twitter. My husband makes INCREDIBLE lemon bars but he NEVER uses a recipe. I made him tell me the recipe for this. I am hoping the measurements are accurate. :) Crust: Boxed lemon cake mix 2 Tbsp cooking oil 1/4 C water Filling: 16 oz cream cheese 1 egg 3 C powdered sugar 1 tsp lemon extract 1/2 C powdered sugar (sifted) Blend first 3 ingredients. Press into greased 9x9 pan. Bake at 350 for 15 minutes. Let cool. Soften cream cheese. In mixer on low speed beat cream cheese and egg together until combined. Add 3 cups powdered sugar gradually. Add lemon extract. Increase speed to medium/high speed for additional 2 minutes. Pour filling over crust. Bake at 300 for 20-25 minutes until filling is firm. Let cool. Sprinkle with sifted powdered sugar. Enjoy!!!

Rash Like No Other

**I started this post a couple weeks ago and just now finished. What have we been up to lately?  A lot actually!!  It has been quite a couple of weeks!  Last Wednesday Lauren came into my room where I was getting ready for work and her thighs were bright red!  They were splotchy and she had a rash.  She was not complaining of anything.....yet.... Clearly I couldn't go to work so I slowed myself down a bit and then when the clock struck 8:00 I started calling the pediatrician's office.  My first thought..."Well, crud!  Our pedi is off on Wednesdays!"  Got her an appointment for 11:30 and took the other girls to school trying my hardest to keep her away from them...not an easy feat!  So, at the pediatrician's office she was diagnosed with hives.  Strep swab was negative.  Instructions: give Benadryl every 6 hours, as it should give some relief and you should see the spots lessen.  Also, you can give Ibuprofen and Acetaminaphen for pain and discomfort.  We went on ou

Friends...Forever!

What is a friend?  Webster defines a friend as: a person whom one knows, likes, and trusts. It goes on to talk about a friend being a supporter.  I would have the tendency to assume that everyone has at least one friend...maybe not a best friend or perhaps maybe not even a close friend but someone that they can call a friend.  I know that difference personality types lend themselves for more friends than others.  I am a sanguine which means that I have a lot of people that I consider to be my friend.  I have always been the type of person that needs and wants friends...people around me who love me, encourage me, and support me.  On the flip side of this, I have always had a hard time trusting people so I tend to be skeptical of people.  Unfortunately, a friend described me pretty accurately this morning.  She said that I (and she is the same way) have the tendency to dislike people until I have a reason to like them.  No, not proud of it...but I am just skeptical.  I have been hurt
